With organic wheat flour 00
INGREDIENTS FOR GINGER COOKIES
- 390 gr of organic 00 flour
- 160 gr of honey
- 120 gr of butter
- 100 gr brown sugar
- 1 large Bio egg
- 1 teaspoon baking soda
- 1 tablespoon mixed spice powder (cinnamon, cloves, ginger, nutmeg, pepper)
- a pinch of salt
For the royal icing - 250 g icing sugar
- 1 medium egg white
- lemon juice
- food coloring (optional)
PROCEDURE
- Place honey, sugar, and butter in a small saucepan and heat.
- Mix the dry ingredients (flour, a pinch of salt, baking soda and spices) in a bowl.
- Pour the honey, sugar and butter mixture over the flour; add the egg and knead until smooth and firm. Cover with plastic wrap and transfer to the refrigerator for at least one hour.
- Roll the dough into a thin sheet; cut out cookies using the special molds until the dough is used up.
Transfer to a baking sheet covered with baking paper and bake at 170° for 10-15 min. Allow to cool completely.
Prepare the royal icing - Whip egg whites to stiff peaks at room temperature.
Gradually incorporate the powdered sugar, and before the egg white is fully whipped, add a few drops of lemon juice.
To check the consistency, lift the whips and check that the icing is firm and peaks form on the whips.
Add more sugar if it is not firm enough. - Color as desired with food coloring.
Use the icing to decorate cookies using a piping bag with a very thin nozzle.
