With Organic Soft Wheat flour type "0"

INGREDIENTS FOR THE FOCACCIA

Ingredients for 4 persons

500 gr of Organic Soft Wheat flour type "0"
340 ml of warm water
7 gr of fresh brewer's yeast
10 gr of fine salt
25 gr of extra-virgin olive oil

For dressing:

60 gr of extra-virgin olive oil
Cherry tomatoes to taste
Coarse salt to taste

PROCEDURE

  • In a bowl, pour the flours; add the fresh yeast and the warm water gradually, start to mix all the ingredients, allowing the flour to adsorb all the water uniformly.
  • Transfer the dough on the counter and keep mixing, incorporating gradually the 25 ml of olive oil.
  • Roll out the dough on the counter and add the salt on the top of it, starting to mix again to incorporate it.
  • Transfer the dough in a bowl greased with olive oil and close it with plastic wrap, leaving it rise in room temperature for about 3 hours.
  • After the rising time has elapsed, transfer the dough onto a previously oiled baking sheet, spread it evenly with your fingertips and transfer the 60 ml of olive oil onto the dough.
  • Cut the cherry tomatoes into wedges and sprinkle them over the dough along with coarse salt. Bake in a preheated oven at 200° for 30 minutes.

For the preparation of focaccia, is recommended the use of Organic Soft Wheat flour type “0”, which is suitable for the preparation of particularly elastic and consistent doughs, such as those for fresh pasta, bread and cookies.
