With Organic Kamut® flour and Organic Soft Wheat flour type "00"
INGREDIENTS FOR THE CRÊPES
Ingredients for 6 peopleFor the dough:
150 g of Organic Kamut® flour type "0"
150 g of Organic Soft Wheat flour type "00"
400 ml of water
300 ml of rice milk, oat milk or cow milk
1 organic egg
1 pinch of fine salt
Sunflower oil for cooking
For the filling:
4-5 sliced apples
Cinnamon to taste
Brown sugar juice or maple syrup to taste
PROCEDURE
- In a bowl, place the Kamut® flour, previously sifted 00-type flour, and half a tablespoon of salt. Stir with a wooden spoon and incorporate the milk and water at a trickle.
- Mix the ingredients well, taking care not to form lumps. Finally, add the previously beaten egg. Let the dough rest in the refrigerator for about 2 hours covered with plastic wrap.
- Meanwhile, fry the apple slices in a little oil, after sprinkling them with a pinch of cinnamon.
- In another pan, heat some oil, place some batter in the center, tilt the pan to spread it over the entire surface, and let it cook for about 1 minute per side.
- Once golden brown on both sides, remove it from the pan and lay it on a plate. Stuff with a spoonful of cooked apples, sprinkle with a drizzle of maple syrup and serve.
Which flour do I use?
To prepare apple crêpes is recommended the Organic Kamut® type 0 flour and Organic wheat flour type “00”. Kamut® type “0” flour is specific for all baking uses: fresh and frozen bread, pizza, breadsticks, rusks, crackers, piadinas and sweet and savory pastries. Organic wheat flour type “00” is considered the most “refined” of flours and is suitable for all uses in baking, especially for making fresh pasta, bread, pizza and cookies.
