With Organic Soft Wheat flour type "00"

INGREDIENTS FOR THE CHRISTMAS COOKIES

For the shortcrust pastry:

500 g Organic Soft wheat flour type 00
2 Organic eggs
250 gr of cold butter
200 gr sugar
1 pinch of fine salt
Peel of one Organic lemon

For the decoration:

150 gr dark chocolate 
Sprinkles to taste

PROCEDURE

  • In a blender, place the flour, add the cold butter cut into chunks and a pinch of salt. Blend intermittently, so as not to overheat the butter, until a sandy consistency is obtained.
  • Combine the sugar and whisk for a few seconds, then add the eggs and lemon zest.
  • Blend quickly to mix the ingredients, after that, transfer the shortcrust pastry to the work surface.
  • Knead the dough with your hands until it forms a smooth, homogeneous loaf.
  • Cover the loaf with plastic wrap and let it rest in the refrigerator for at least 1 hour. Take the dough again, divide it into two parts and roll out sheets about 1 cm thick.
  • Form the cookies with the chosen shapes, place them on a baking sheet covered with parchment paper and bake in a ventilated oven at 180°C for 12 to 15 minutes, until golden brown.
  • Remove from the oven and allow to cool completely. In the meantime, start chopping some dark chocolate, then melt it in a microwave or bain-marie.
  • Dip part of the cookies into the chocolate and decorate with sprinkles to taste. Allow the chocolate to set and enjoy.

For the recipe, it is recommended to use Organic Wheat flour type "00", considered the most "refined" of all the flours, ideal for preparing sweet and savory recipes that do not require long rising times
