With Organic Soft Wheat flour type "Manitoba" and Organic Soft Wheat flour type "00"


INGREDIENTS FOR THE PIZZA

Ingredients for 3 pizzas

For the dough:

200 gr of Organic Soft Wheat flour type "Manitoba"
300 gr of Organic Soft Wheat flour type "00"
300 ml of warm water
4 gr of fresh brewer's yeast (or 1,5 gr of dry yeast) for pizza
10 gr of fine salt
1 pinch of sugar

For the filling:

300 gr of tomato sauce
150 gr of mozzarella cheese
Oregano and fresh basil to taste
Extra-virgin olive oil to taste

PROCEDURE

  • In a bowl, pour the Organic Soft Wheat flour type "Manitoba" and the Organic Soft Wheat flour type "00"; add the salt, sugar and the fresh yeast previously dissolve in 100 ml of warm water (it's not necessary if is dry yeast).
  • Pour the rest of the warm water a little at a time, meanwhile stirring so all the ingredients are mixed together. There is no need to knead in this phase.
  • Flour the surface of the dough, cover with plastic wrap and let it rise covered with a dishcloth for about 12 hours in a cool place.
  • After the time has pass, turn the dough out onto the work surface and divide it into two or three portions. With well-floured hands, roll out each portion in a round pizza pan, previously greased with oil, or in a baking pan covered with baking paper.
  • Stuff with tomato sauce, mozzarella cheese, oregano, fresh basil, extra-virgin olive oil and/or favorite ingredients. Bake in preheated oven at 180°-200° for 10 minutes. 

Which flour do I use?

We recommend a mix of Organic Soft Wheat flour type “Manitoba” and Organic Soft Wheat flour type “00”, ideal for kneading and preparing our Neapolitan pizza.
